Kropkakor/dumpling was served on Twelfth Night, or for any occasion and small kropkakor in Swedish Christmas.
Recipe
5 kl potato raw potato
500 gram kok potato
1.5 kl salted pork
70 gram onion
35 gram crushed allspice
any salt
To boiling
7 liter water
3 tablespoon salt
Boil the potatoes and after let it become cool. Cut the pork into small cubes. Chop the onion and mix it with the allspice, the fine diced pork and any salt depending on how salty pork is. All this is done to advantage the day before.
Squeeze the cooked potatoes and grate the raw potatoes. Squeeze out the water from the raw potatoes with a screen in a bowl. Add potato flour that is in the bottom. Mix the cooked and the raw potatoes with potato flour.Take the potato mixture and roll into a bun and then flatten. Add in a little pork / spice / onion mix. Roll into a smooth bun. Add dumplings simmer for about 1 hour.
